Top 5 Vegetarian Meals
Just because a meal is vegetarian doesn’t mean that it can’t be hearty and delicious! I’ve experimented with vegetarian/vegan meals for the past two years in a quest for better health. Below are some of my all-time favorites!
1.) Eggplant Parmesan:
This is my number one pick that my mother introduced to me. This is a delectable Italian dish with a twist. Instead of using veil patties to make the traditional veil Parmesan, a slice of eggplant is battered and baked in an oven before it’s topped with marinara and cheese. (It’s my all-time favorite meal for a reason.)
2.) Black bean lasagna:
A southwestern version of the classic meat lasagna, this dish uses flour tortillas for a pasta substitute and black beans as a meat substitute. It also incorporates avocado, salsa, garlic, and onion to create layers of vegetable goodness. And let’s not forget the cheese in between.
3.) Black bean veggie burgers:
I love this recipe because it’s like eating a burger without feeling like you need a nap afterwards. This recipe calls for mashed black beans, bell peppers, onion, and garlic. Add an egg and bread crumbs to keep the mixture, and you can bake or grill it.
4.) Stuffed bell peppers:
Refreshing and colorful, stuffed bell peppers can be made in a variety of ways with several different types of rice and vegetables to add different textures and flavors. My personal favorite uses feta cheese and Arborio rice to create a zesty flavor.
5.) Cauliflower-cheese soup:
For the cold, rainy days when you don’t want to go outside, a warm bowl of soup can be an amazing mood booster. This recipe contains carrots, potatoes, cauliflower obviously, and Cheddar cheese. Full of nutrients, yet still hearty. I love to eat this with bread and a side salad.
