As we enter further into quarantine and social distancing, it’s important to limit going out, even when it comes to things like trips to the grocery store. Making sure to cook food at home instead of eating out can also help keep everyone safe. Here are some recipes that are easy to make with limited ingredients that anyone can make while they’re stuck at home.
1. Instant Nachos
Ingredients:
-Handful of tortilla chips
-shredded cheese
-canned beans
Instructions: Spread tortilla chips on a plate and top with cheese and beans to taste (as well as any other toppings you have at home). Microwave until everything is warm and cheese is melted.

2. Homemade Boba
Ingredients:
-Tapioca pearls (order online)
-honey or other liquid sweetener
-green tea/coffee/other beverage
Instructions: Bring a pot of water to a boil with a few spoons of honey or other sweetener. After it boils, drop tapioca pearls into the water and boil with the lid on for five minutes until they are hydrated. Make sure to keep an eye on the pot so it doesn’t boil over. Serve with an iced or hot beverage.

3. Whipped/Dalgona/Tik Tok Coffee
Ingredients:
-Instant coffee (regular coffee grounds don’t work)
-Sugar
-Hot water
-milk
-flavorings (optional)
Instructions: Combine two tablespoons of instant coffee, sugar, and hot water in a bowl and whisk until fluffy. Other flavorings, like vanilla extract, cinnamon, or cocoa powder can be added, but may alter the consistency of the coffee. Whisk by hand or with an electric mixer or milk frother. Spoon on top of a glass of milk and mix to combine before drinking.
4. Instant Pot Moroccan Stew
Ingredients:
-olive oil
-one and a half cups of onion
-three tomatoes (canned or fresh)
-four cloves of garlic
-half a cup of vegetable broth
-two cans of chickpeas (drained)
-two or three spoons tomato paste
-stew vegetables (carrots, potatoes, more tomatoes, etc.)
-paprika, turmeric, salt, pepper, white pepper, garlic powder, cinnamon, allspice, cumin, and coriander to taste
-three cups vegetable broth
-spinach
-lemon juice to taste
Instructions: In the Instant Pot, saute the onion, tomatoes, and garlic in olive oil. Once the onions are translucent, add half a cup of vegetable broth, cover, and let cook for eight to ten minutes. After it reduces, turn off the heat and add chickpeas, tomato paste, and other stew vegetables. If using potatoes, microwave the pieces first to make sure they are fully cooked. Add spices and the remaining three cups of vegetable broth, and set the Instant Pot on high pressure for eight minutes. After cook time, allow pressure to release for five minutes before opening the vent. Add spinach and cook until it wilts. Add lemon juice and serve.

5. Oreo Microwave Cake
Ingredients:
-Oreos (three to four)
-milk
Instructions: Put Oreos in a mug and crush them. Add milk to cover the Oreos. Microwave for one to one and a half minutes. Let sit for a few minutes before eating.
